Each momo is hand-folded and stuffed with seasoned minced chicken, then steamed to tender perfection before being wok-tossed in a fiery Indo-Chinese chilli sauce. The result is a dumpling with a soft, juicy centre and a punchy, spicy glaze that keeps Calgary coming back.
